Taste of Tradition - Al Dhafra
Executive Chef Thorsten Sbrzesny commented ‘As a fairly new hotel we are honored to be included in such a traditional event. Working with camel meat will be a first for me but so far I have found it to be a very tender meat, like veal.’
The festival, now in its third year, celebrates local traditions and is organized by Abu Dhabi Authority for Culture and Heritage (ADACH) under the patronage of HH General Sheikh Mohammed Bin Zayed Al Nahyan. Held in Zayed City, Al Gharbia, the event will showcase local produce and traditional handicrafts focusing mainly on the purebred Arabian camel livestock.
Chefs from prestigious hotels in the capital will be testing their culinary skills with camel based menus of their own creation. Under the guidance of Chef Thorsten, Churles Kennedy Chef De Partie from 18oz, Ranga Kumara, Chef De Partie from Resto and Chef Bandara Madusanka – Demi Chef De Partie from pastry section will be cooking a menu of biltong, scaloppini and camel pannacotta.
Over 1200 proud camel owners will be competing for the title of ‘Most beautiful Camel in the World’ with photography and culinary competitions continuing throughout the festival.
